This product is dry salted and pickled with salt, herbs and spices. Lastly, it is smoked and left to age for about 60 days. This meat is sweet, tender, rich in flavour and has a nice smoked aroma. It is ready to serve – just arrange the slices on a plate and season them with oil, lemon, rocket salad and Parmesan slivers.
