A defined part of pork bacon is cut, salted and seasoned. Once the rind is removed, bacon is rolled up and hand-tied with twine and bamboo sticks (which are typical of the Calabrian region). Lastly, it is dusted with chilli powder both on the inside and on the outside. It is then left to age, but not for too long. The result is a fresh product with a slightly hot note.
