Raw meat is dry salted and marinated for about 3-4 weeks with a mix of 20 spices at an average temperature of 3°C. During this phase, meat absorbs the aromas and develops a sweet, slightly spicy flavour. It is usually served as a carpaccio, with olive oil, pepper and fresh vegetables. When pan-fried with a Treviso radicchio, it is a real delight for the senses.
