This meat cut comes from the cheek of the pig, in which the fat is different from lard or bacon, being harder in texture and more distinctive in flavour. This triangle-shaped product is cured for a week and then seasoned with pepper, chilli, rosemary and other herbs. It is left to age for at least 60 days. It can be spread on warm toasted bread (“crostini”) or used in the classic way: as an ingredient of Amatriciana or Carbonara pasta sauces.
