Bacon is a cured meat prepared with the pork belly. After the trimming, there is the maturation (at least 50-60 days) where the meat is sprinkled with salt, flavourings, spices and black pepper. Lastly, there is the smoking process in the oven with green woods of juniper to give a particular taste to the product. The final look of the this cut is a layer of yellow fat, due to the smoking process and rose threads of lean meat.
