The pig's leg is extensively handmade: dissected, scalped, degreased, trimmed and it's finally covered by natural casing. At the end of this process, the meat has been processed at maturation that it lasts 15-16 months and may provide a break in a wet place. It's an incredible cold cut for its delicate aroma and its complex taste. Tasting naturally with toasted bread spreaded with butter flakes and accompained by light red wine.
