Spalla is made from pork forefoot, which is removed together with the shoulder blade. It is boned, hand-cut and left to age, after having been rubbed with sea salt, so that this preserving ingredient can penetrate the muscle mass. Exceeding salt is then removed. Lastly, the part with no rind is covered with a paste of fat, rice flour and black pepper. The ageing period lasts about 8 months. Spalla is tasty and compact, with a sweet note due to the presence of fat.
