This typical fish speciality from Southern Italy is particularly appreciated for its high content of essential fatty acids (omega-3). The marinating process with oil, lemon, vinegar and finely chopped garlic and parsley is a proper way of cooking. Anchovy fillets are then preserved in oil to keep their delicate flavour. They can be served either on a slice of rustic bread or alone with some extra virgin olive oil, mint leaves and chilli flakes.
