This product is made exclusively from pork legs of Italian animals of the same livestock holdings that supply the production of Prosciutto di Parma and San Daniele. The procedural guidelines require the addition of a mix of salt, pepper and natural spices made from typical Tuscan berries and plant extracts, which lend the pork leg (aged for a minimum of 16 months) a characteristic aspect. However, sodium and potassium nitrates (which are not allowed in the production of Prosciutto di Parma and San Daniele) may here be used.
