Octopuses are boiled adding vegetables and spices (like peppercorns or juniper berries) to the cooking water. Their meat is then pressed, becoming more compact and cylindrical. Once cooled, it is sliced like a carpaccio and seasoned with extra virgin olive oil, lemon, parsley and chilli powder at will. This low-calorie, light dish is perfect during the summer, whether as an appetizer or as a second course paired with vegetables.
