Bacon is a pork cured meat prepared with the animal belly. After the trimming, that gives the right shape, the bacon is salty with salt, flavourings and spices (for example black pepper) and then leaved for few days. Afterwards the bacon is rolled like a big salami and gutted in a gut with the right size. The maturation shall extend for about 90 days. During cutting bacon has a white layer of fat with rose threads of lean meat.
