After an accurate selection to choose the ripe ones, the truffles are brushed, washed and boiled with water and salt. After that they are putted in a vase with their liquid (the brine with the truffle taste) and sterilized. In this way it's mantained the freshness and the taste of truffle. They can be used to garnish dishes instead of fresh truffle, cutting into slices.
