Loin is a cut made from the back of hogs or boars. The meat is salted, dried and left to age for about 40 days. In this case, being boar meat, its flavour is particularly distinctive. It can easily be cut into thin slices, so it can be served on a cold cuts platter, but also alone as an appetizer.
