The best part of the boar leg is the leanest and tastiest. This part is dissected and prepared like beef Bresaola: the fat is cleaned off and the meat is seasoned with garlic, repeatedly rubbed and marinated. Then it is dried and left to age, paying attention to its texture, which shouldn’t become hard or tough. It can be tasted alone or seasoned with oil, lemon and black pepper.
