It' a soft fresh pasta filata cheese obtained from buffalo milk, rennet and salt. It' s with thin leaves and acidulous taste, sometimes it can be presented cracks due to the spinning process. Cutting it's occurred white serum an fat with a tipical flavour of lactic ferments. It has an oval shape, the colour is white e and on the mouth is very delicate, due to buffalo milk. It's perfect eating just like this or on top of tomato slices seasoned with olive oil and oregano.
