Made from selected pork cuts like shoulder and bacon, this sausage is minced to a medium grain and seasoned with chilli pepper (a typical ingredient of Calabrian tradition), red pepper sauce and fennel. Once put into natural casings and hand-tied, it is left to age for about 20 days, hung on both sides to acquire the typical shape. Cut into thin slices, it is a mouth-watering appetizer, possibly paired with unsalted Tuscan bread, which contrasts its distinctive flavour.
